These halwas are relatively dense confectionery made with sugar, honey, pistachios and dried raisins.

Ingredients for 6 servings
servings
3.5 oz (100 g) of semolina
2.1 oz (60 g) of sugar
1.7 cups (40 cl) of milk
3.5 oz (100 g) of dried raisins
12 pistachios roughly crushed (keep some aside for the top of the cake)
a few sliced almonds
6 cardamom pods from the spice island
3 tablespoons of ghee (clarified butter)
honey for the top of the cake
Step-by-step directions
1 In a saucepan mix the semolina, sugar, dried raisins, roughly crushed pistachios (set some aside for the top) and milk while stirring constantly. 2/ Incorporate the ghee or clarified butter, cardamom seeds (place between 2 leaves and tap with a small hammer to extract the seeds). 3/ Stir until the paste is thick. Butter a small mold, spread the paste (the cake should be 3 to 4 cm thick), place sliced almonds on top. 4/ Let cool in the refrigerator for 2 hours. 5/ Unmold, cut squares, place the remaining pistachios on top and serve with a little honey drizzled on top. Enjoy!!!!

Good recipe. 2 suggestions to improve your Halwa. Toast your crushed pistachios lightly in a dry pan (roast) then place them on paper towels before adding them to your recipe, this will give the whole dish a nice hazelnut flavor that pairs wonderfully with honey. For the raisins, try soaking them in rose water 2 hours before adding them to your recipe and let me know (smiles).
