1 Peel the apples and core them. Drizzle them with lemon juice to prevent them from browning.
2 Prepare the shortbread pastry by mixing all the ingredients in a food processor or by hand.
3 You should get a firm dough that isn't sticky. Roll it into a ball, wrap it in cling film, and let it rest in the refrigerator for 1 hour.
4 Once the dough has rested, roll it out and cut circles that are 2.5 times larger than the diameter of the apples. Place an apple in the centre of each circle, add a knob of butter inside the apple, and sprinkle with sugar.
5 Fold the edges of each circle up around the apple, sprinkle with more sugar, and bake the apple tarts in the oven for 30 minutes at 355°F (180°C).
