this very refreshing dessert will look beautiful served in nice glasses with a few fresh mint leaves on top

Ingredients for 6 servings
servings
glazed green apple quarters for 6 to 8 people:
2.2 lb (1 kg) of green apples (granny smith) peeled, cored and cut into 8 quarters per apple.
2 star anise (badiane)
1/2 juice of lemon
1.25 cups (30 cl) of orange juice
3.2 oz (90 g) of raisins
1/2 bottle of jurançon (1.5 cups (35 cl))
1 pinch of cinnamon
Step-by-step directions
1 bring the orange juice to a boil then add the raisins, bring back to a boil and let rest covered on the side for 30 minutes.
2 put in a saucepan your jurançon* the star anise the 1/2 lemon juice and the pinch of cinnamon then, at boiling point add your apple quarters and your mixture of raisins and orange juice.
3 cook for 8 minutes, then remove from heat and let rest covered for 30 minutes. transfer to a large salad bowl.
4 arrange harmoniously with a skimmer your apples and raisins in each glass (don't forget to remove the star anise) then fill with a ladle the liquid in each glass. put in the fridge for a minimum of 30 minutes. serve very cold with a small tuile for example. * jurançon can be replaced with loupiac, sauternes or even late harvest alsace wines in short all wines that are a bit overripe.
