1 Slice the onions and zucchini thinly
1 Sweat them in olive oil for 3 minutes then salt and pepper
2 Add 2.1 cups (50cl) of water and the bouillon cube
3 After 20 minutes blend then when the soup is nice and smooth add the Laughing Cow cheese squares and blend for another 10 seconds
serve very hot

a variation...add 1 or 2 tomatoes and 1 carrot leaving it to cook a bit longer...
