Recipe: Avocado and Shrimp Verrines

1 Blend the avocado flesh with one tablespoon of lemon juice, a pinch of salt and ground pepper. Add guacamole powder to taste...
2 Spread a layer at the bottom of each verrine. Then make a classic olive oil mayonnaise. Place half of it in the verrine and color the rest of the mayonnaise with tomato paste.
3 Place this preparation in the verrine, separated from the mayo by two or three shrimp.
4 Shell and arrange the shrimp in the verrines, decorate with lemon slices and a sprig of fennel.
5 Refrigerate until ready to eat.
