1- Bring 6 liters of water to boil and salt with coarse salt.
2- Make a bundle with the asparagus then cook them with a cloth placed on top.
3- Place the zests in a tea ball and immerse it with the asparagus.
4- To check if the asparagus is cooked, use the tip of a knife which should sink into the base of the asparagus.
5- Drain them on absorbent paper and empty the zests into a bowl, add the grapefruit juice warmed to 8cl of olive oil, salt, pepper and fresh herbs.
6- Place your 3 asparagus on each plate and pour to taste the warm sauce with the zests.
You will then have a pleasant taste surprise by enjoying the mixed flavors of grapefruit and asparagus.
