Ingredients for 4 servings

  • Fillets from 2 beautiful soles of about 300g each
  • 8 "baton" leeks (finger-sized)
  • Remove the root and make a lengthwise cut in the green part to clean under running water
  • 2 shallots (grey if you can find them) minced
  • 12 cl of liquid cream 30%
  • 12 cl of white wine, sauternes type
  • 1 egg yolk
  • Salted butter
  • Salt and freshly ground pepper
  • 1 tablespoon of turmeric (Madagascar if you can find it)
