Pear mousse:
  • 500 g drained pears in syrup
  • 50 cl of whole liquid cream
  • 2 ½ packets of Chantifix
  • 115 g of sugar
  • 3 g of agar-agar
Chocolate mousse:
  • 1 tablet of pastry chocolate
  • 6 eggs
  • 1 pinch of salt
Speculoos biscuit:
  • 400 g of speculoos
  • 160 g of melted butter
