  • 250 g ripe fragrant French strawberries (wild strawberries work great)
  • 100 g caster sugar
  • 2 tbsp strawberry liqueur or cream (or red fruit)
  • 30 cl whole milk
  • 25 cl liquid whole crème fraîche
  • 1 vanilla pod
  • 4 egg yolks
  • 4 sheets of food-grade gelatin
  • 1 bunch of fresh mint leaves
