Blonde Lentils from St Flour and Heirloom Carrots
  • Rabbit loin casserole with lemon balm for 4 people:
  • 8 pieces of farm rabbit loin weighing 140 to 150 g each.
  • 300 g of heirloom carrots (Créances if you can find them) peeled and cut into thick batons (julienne)
  • 200 g of blonde lentils from St Flour
  • 3 peeled shallots
  • 100 g of artisanal smoked lardons blanched
  • 8 g of dried lemon balm finely ground
  • butter, oil (or duck fat)
  • salt and freshly ground pepper
  • 1 tablespoon of old-fashioned mustard
  • diluted with 5 cl of 30% liquid cream.
