1/ put flour in a bowl, make a well, crack the whole eggs into it. add the oil, salt and a little milk. work vigorously for lightness and gradually add the milk to obtain a ribbon consistency. let rest for 1 hour. if the batter has thickened, thin it with a little water or milk. 2/ cook the crêpes.
3/ peel and cut the apples into cubes, add a little lemon juice to prevent browning. also cut the ham into cubes.
4/ preheat oven to 200°
5/ put a crêpe in a ramekin or in the dish, fill it with apple and ham cubes, cover with a little gruyère and roll the crêpe so it is completely closed.
put some raw cream on top then gruyère and put in the oven for approximately 20 minutes until the cream is liquid and the gruyère is gratinéed. adjust the oven temperature according to your stove.
