Ingredients for 4 servings
- 8 slices of white bread
- 8 tbsp of fresh goat cheese
- 4 tbsp of soy cream
- 1 block of smoked tofu
- malt yeast
- 2 large parsnips
- 1 sprig of lettuce
- 1 sprig of chives
- 1 egg yolk
- 5 tbsp of plain soy milk
- olive oil
Peel and cut the parsnip into cubes.
In a bowl put the goat cheese, soy cream, chopped chives and season. Mix well.
Cut thin slices of smoked tofu.
Take the slices of white bread and spread the goat cheese-cream-chive mixture on one slice. Then place the smoked tofu slices and sprinkle malt yeast on top, close with another slice of bread.
Then in a ramekin put the egg yolk, soy milk, salt and pepper.
In a pan with olive oil sauté the parsnips and when they are almost cooked stop cooking.
Dip both sides of the bread in the milk, not too much, and pan-fry both sides.
Reheat the parsnips.
Serve accompanied by homemade ketchup and salad !!!
