  • 1 beautiful black radish peeled and cut into fine julienne (like grated carrots)
  • 8 pink garden radishes trimmed and just rinsed then sliced, adding a drizzle of olive oil
  • 2 hard-boiled eggs (9 minutes) from Marans if possible
  • Remoulade
  • 1 egg yolk
  • 1 large spoon of strong mustard
  • 10 cl of rapeseed oil
  • garden herbs
  • salt and freshly ground pepper
