Ingredients for 4 servings
- 500 g of fresh duck gizzards
- 1 onion
- 3 tablespoons of olive oil
- 400 g of button mushrooms "preferably fresh"
- salt, pepper
- 1/2 liter of poultry broth
- 1 tablespoon of cumin
- 2 tablespoons of cornstarch (diluted in cold water)
1/ Brown the mushrooms, onion and gizzards in hot oil for a few minutes.
2/ Lower the heat and add the poultry broth, the 2 tablespoons of cornstarch diluted in cold water, salt, pepper and cumin.
3/ Cover and simmer over low heat for 2 hours. Stir from time to time. The texture of the gizzards should be very tender and the sauce reduced. Enjoy!!!!
