Ingredients for 3 servings
- 20 oysters
- 1 half leek
- 1 carrot cut very fine
- 1 dl of white wine
- 1 dl of thick crème fraîche
- 1 small piece of butter
- pepper
- herbs of Provence
Melt the butter
add the carrot and leek
add the white wine until reduced
add the oyster water
reduce by half
add the cream + herbs of Provence
let cook 5 minutes
poach the oysters for 2 minutes
remove from heat and return to shell.
