Ingredients for 8 servings
- 5 tablespoons of olive oil
- 2 g of lavender
- 3 g of rosemary
- 3 g of thyme flowers
- 3 g of marjoram, oregano or nepita
- 1/2 clove of garlic just crushed
- 5 g of salt
- 3 g of white ground pepper
The day before:
Heat the olive oil to 40°C, turn off the heat, add the aromatics, then cover with a lid to infuse
The next morning:
1- Strain the infusion through a fine strainer and keep only the scented oil
2- Make small incisions on the leg of lamb, then brush the scented oil with a brush, then put the leg of lamb in the refrigerator for 2 hours like this
3- Cook in the oven, basting constantly. At the end of cooking, if there is a little of this marinade left, mix it with a spoonful of honey then pour over the leg of lamb and put it for 5 minutes in the grill position: this will perfume the house.
