Ingredients for 2 servings
- 800 g pink grapefruits, about 2
- 7 g chives
- 50 g garlic and herb cheese
- 10 g dried apricot
- 100 g smoked salmon
- 50 g arugula
Instruction: Peel the grapefruits completely and slice them into 5 pieces lengthwise. Wash the chives and pat dry. Cut the salmon into small pieces or rounds. Take the bottom slice of grapefruit and cover it with fresh cheese, a few arugula leaves, place a slice of salmon with a few chive strands then grapefruit. On the grapefruit slice, cover with cheese, a few arugula leaves, then smoked salmon and a few dried apricot pieces, then the final top, balance it in a large plate.
Tip: It's very fresh and very tasty. If you want to lighten it even more, replace the fresh cheese with skyr mixed with chives.
