1- Peel and grate your potato into a bowl.
2- In a bowl beat the egg like an omelette, add your tablespoon of parmesan, pepper. Mix with the potatoes.
3- Take a small non-stick round mold (I used a small cocotte) generously butter your mold. Incorporate your potato mixture by pushing the potatoes up the sides to give it the shape of a nest.
4- Cook at 200°C for 15 to 20 minutes.
5- Once cooked, remove from oven and let cool. Unmold onto an oven-safe dish.
6- While this is happening, sauté the onion with the bell pepper strips for 2 minutes then continue for 2 minutes over low heat covered so they cook completely.
7- Take the nest and arrange the bell pepper strips all around it leaving a hollow in the middle. Add your egg in the middle. Salt and add 5-peppercorn grind. Put in the oven for 12 to 15 minutes (depending on ovens) and let your egg poach.
Ready for the table!!!
