Ingredients for 8 servings
- a veal breast deboned by the butcher, 2kg
- 200 g of brocciu
- a handful of fresh mint washed and dried
- a little aqua vita (marc brandy)
- salt pepper
- oil and butter
1/ make a stuffing with the cheese, mint, and brandy, salt and pepper
spread this stuffing over the breast
roll it, tie it up.
2/ preheat your oven to 180°(th6) butter and oil a dish
cook in the oven for approximately 1 hour 30 minutes, basting often with pan juices.
if it colors too quickly cover with aluminum foil...
serve with wild rice or good polenta (chestnut would be ideal).
