  • 1 bay leaf, a sprig of thyme, 1 unpeeled garlic clove crushed
  • and a few crushed peppercorns
  • 250 g of French chanterelles* wiped with stems removed
  • 1 garlic clove, germ removed, finely chopped
  • Olive oil and butter
  • salt
