sort the raspberries without rinsing them.
split the vanilla pod and scrape it.
bring the water, confectioner's sugar and vanilla to a boil, and let cook for 3 minutes at a gentle boil. remove from heat and let cool. reserve the syrup in the refrigerator to serve it chilled.
reduce the vichy tablets to powder
by crushing them in a clean cloth
pour the cream, powder of tablets and sugar then blend everything put 1 hour in the freezer, then whip the whipped cream.
in 4 large cocktail glasses, pour one third of the syrup, then place one third of raspberries with the mint leaves previously finely sliced (finely chopped), and finish with one third of whipped cream piped with a pastry bag.
