Ingredients for 4 servings
- 16 sardines
- 1 bunch of flat parsley
- 4 tbsp cumin
- 2 tbsp olive oil
- 2 tsp harissa (homemade is better)
- salt
1- Remove the central bone from the sardines so as to obtain your two fillets held together (you can also ask the fishmonger to take care of it...).
2- Marinate the sardine fillets in a dish with olive oil.
3- Chop all the parsley leaves very finely. Mix them with cumin and harissa. Salt.
4- Place 2 tbsp of this filling between two fillets. Hold them with a skewer and pass them over the barbecue or on a griddle.
