One weeknight, a few years ago, all I had left in my fridge was a puff pastry that was one day past its expiration date. So I rummaged through my cupboards to figure out what to do with it to avoid wasting it and invented this recipe, which I really enjoyed. Obviously, when summer came around, I made it again with fresh sardines grilled on the barbecue and homemade eggplant caviar, and that was absolutely amazing!

Ingredients for 4 servings

1 commercial all-butter puff pastry base,
1 large teaspoon of Dijon mustard,
250 to 300 g of homemade eggplant caviar (AFTouch recipe, the rest is intended for tomorrow's appetizer toasts), and in winter, I use 1 can of 400 g of eggplant caviar or preserve, it's not as good, but it has the merit of existing,
4 beautiful grilled sardines that you managed to save from yesterday's barbecue, in winter 1 can of grilled sardines,
125 g of grated Comté.
