Ingredients for 4 servings
- 2 ripe avocados
- About 20 cooked peeled shrimp
- 1 pink grapefruit
- A hint of ground ginger
- Toasted sesame seeds
- Lemon and lime juice
- Salt
- Pepper
- Chablis wine
1/ Remove the grapefruit segments (flesh without skin) while being careful to retain as much juice as possible.
2/ Using a fork or blender, make an avocado puree and season with a drizzle of lemon and grapefruit juice. Salt, pepper, then add a touch of ginger.
3/ Arrange the preparation in a serving glass by layering successively a rosette of shrimp, the grapefruit segments and the avocado puree, finishing with two shrimp.
4/ Sprinkle with a few toasted sesame seeds.
