Ingredients for 4 servings
- One ripe avocado
- 12 pink shrimp
- Olive oil and one egg to make mayonnaise
- One teaspoon of tomato paste
- One lemon, salt and pepper.

1- Blend the avocado flesh with one tablespoon of lemon juice, a pinch of salt and ground pepper. Add guacamole powder to taste...
2- Spread a layer at the bottom of each verrine. Then make a classic olive oil mayonnaise. Place half of it in the verrine and color the rest of the mayonnaise with tomato paste.
3- Place this preparation in the verrine, separated from the mayo by two or three shrimp.
4- Shell and arrange the shrimp in the verrines, decorate with lemon slices and a sprig of fennel.
5- Refrigerate until ready to eat.
