Ingredients for 6 servings
- 190 g of small bacon pieces
- béchamel sauce
- 2 medium onions
- oil
- 400 g of Type T55 flour
- 3 egg yolks
- 70 g of butter
- 15 cl of milk
- 9 g of baker's yeast saf
- small 1/2 teaspoon of salt
- 2 generous handfuls of grated cheese
Prepare the dough:
1 In your food processor bowl, add your flour (300 g) mixed with salt, and add your egg yolks in the middle.
2 Pour your milk into a glass and warm it in the microwave, then dissolve your yeast in it.
3 Pour your milk over the flour and run your bowl on speed 2. When the ingredients are well combined, add the soft butter cut into small pieces.
4 The dough is not ready yet, add flour little by little until you get a nice smooth and supple dough.
5 Let it rest for a good hour.
Prepare the onion-bacon mixture:
6 Sauté the sliced onions in a little oil.
7 Don't forget to salt and pepper them.
8 When they seem cooked, add the bacon and stir and let it sweat for 5 minutes.
Prepare the béchamel sauce:
9 The recipe here. Prepare it a bit thick preferably, that's what I did.
The final step:
10 Take the dough and degas it, flatten it to get a rectangle about half a centimeter thick.
11 Spread the béchamel sauce, then cover with grated cheese then the bacon
12 Roll lengthwise to get a long roll. With a knife cut the spirals to the thickness you want and arrange them as you go on sheets covered with parchment paper.
13 Parchment paper is mandatory!
14 Let rest for about an hour. Then brush with an egg yolk mixed with a little milk and bake for about twenty minutes!!
