Ingredients for 6 servings
- 100g soft butter
- 180g caster sugar
- 2 whole eggs
- 20cl milk or coconut milk
- 1 tsp baking powder
- 160g desiccated coconut
- 220g strong flour
- 1 pinch salt
1 Start your oven at 170'C (338'F).
2 Place your butter along with the sugar and whisk well for 5 minutes. Then gradually stir in the beaten eggs and the milk (or coconut milk). When all incorporated, fold in the coconut, baking powder and salt. Finish by folding in the flour.
3 Pour the mixture in a greased baking tin and bake for 55 minutes.
As usual, prick your cake with the blade of an office knife to check if it is done. The blade should be hot and almost dry. Otherwise, prolong the cooking for a little while longer.
