Ingredients for 4 servings

  • 1 green bell pepper and 1 red bell pepper from the garden if possible, seeded and thinly sliced
  • 3 new onions peeled keeping the green part, thinly sliced
  • 3 garlic cloves, germ removed and chopped
  • 1 small firm eggplant, halved and thinly sliced
  • 1 nice firm cucumber, peeled, halved, seeded and thinly sliced
  • 1.75 oz (50 g) pitted olives, thinly sliced
  • 2 ripe tomatoes, blanched, seeded and cut into small cubes
  • A pinch of lemon thyme flowers, fresh
  • 0.3 cup (8 cl) olive oil
  • 5 basil leaves, thinly sliced
  • Fine salt and Cayenne pepper
