You may be surprised by the title of this recipe. The idea came to me, thanks a bit to you and also while leafing through my old culinary handbooks.
Ingredients for 4 servings
- 1 green bell pepper and 1 red bell pepper from the garden if possible, seeded and thinly sliced
- 3 new onions peeled keeping the green part, thinly sliced
- 3 garlic cloves, germ removed and chopped
- 1 small firm eggplant, halved and thinly sliced
- 1 nice firm cucumber, peeled, halved, seeded and thinly sliced
- 1.75 oz (50 g) pitted olives, thinly sliced
- 2 ripe tomatoes, blanched, seeded and cut into small cubes
- A pinch of lemon thyme flowers, fresh
- 0.3 cup (8 cl) olive oil
- 5 basil leaves, thinly sliced
- Fine salt and Cayenne pepper
