Ultra Simple Whiting Croquettes delicate and fragrant
Ingredients for 4 servings
- 17.75 oz (500 g) whiting fillets
- 4 Bintje potatoes
- 1/2 bunch parsley
- 2.6 oz (75 g) butter
- 2 tablespoons olive oil
- 2 eggs
- a little flour
- 1 medium onion
- Salt, freshly ground pepper
Step-by-step recipe
1 Cook the potatoes in their skins in salted water for 30 minutes (12 minutes in a pressure cooker), then peel them once cooked.
2 In a food processor, blend the raw whiting flesh, potatoes, eggs, 1 teaspoon salt, pepper, parsley and onion into a puree.
3 Using the puree obtained, form balls the size of an egg, flatten them and coat them in flour.
4 In a pan, heat the butter and the remaining oil.
5 Add the balls to brown over medium heat without crowding them, 5 minutes on each side.
6 Serve immediately
