  3. 3.5 oz (100 g) small smoked bacon lardons sautéed (or smoked duck breast)
  4. 2 eggs
  5. 1 tablespoon olive oil
  6. 2 tablespoons strong white mustard
  7. 1.1 oz (30 g) flour
  8. 3.5 oz (100 g) breadcrumbs
  9. 1.75 oz (50 g) half-salt butter
  10. 1 tablespoon olive oil (for cooking)
  11. a little sliced garlic (in season)
  12. salt and freshly ground pepper
