An inexpensive recipe that I personally really enjoyed, and which I hope will delight your guests. Breadsticks dipped in blue poppy seeds bring a hazelnut note that adds dimension to this delicate white fish. Four fillets cut into diamonds, a light cream with endive and turmeric, everything comes together in less than 20 minutes.

Ingredients for 4 servings

4 beautiful whiting fillets (120 to 5 oz (140 g) average each) boneless and cut into small diamonds 5 cm long by 3 cm wide (goujon pieces)
2 endives wiped clean, cut in half lengthwise, cored and thinly sliced
1.7 fl oz (5 cl) sweet white wine (Muscat de Rivesaltes, Sauternes, etc.)
0.4 oz (10 g) butter
1 dl 30% liquid cream
1 shallot finely chopped
Fine salt, freshly ground pepper, a pinch of turmeric
4 breadsticks cut into 4 pieces, dipped at the top in blue poppy seeds
Step-by-step recipe
1 In a sauté pan, sweat the chopped shallot and sliced endives in butter without browning. Season with salt and pepper, cover and cook for 5 minutes. Add the white wine, cream and turmeric, reduce for 5 minutes, add the goujon pieces, bring to a boil for 2 minutes then remove from heat and cover.
2 Using a bread knife carefully, cut each breadstick into 4 equal pieces, then dip their tips in the blue poppy seeds.
3 Evenly distribute your whiting fillets into 4 warm shallow bowls with a large spoon, arranging the small breadsticks around them. The flavor of blue poppy seeds, which tastes like hazelnuts on the palate, pairs beautifully with the slightly « distant island » character of this recipe.
A chef's advice
With this soft endive cream and turmeric adding an exotic touch, opt for a Chablis premier cru. The crystalline acidity of unoaked Chardonnay stands up to the lightness of the whiting, while the minerality awakens the sweetness of the sauce without overwhelming it. Perfect without overdoing it.
