4 Beautiful slices of line-caught white tuna (albacore) approximately 150 g (5.25 oz) each.
6 small round garden tomatoes peeled and cut in half
Parmesan
1 plate with flour
1 plate with a beaten egg and a dash of olive oil
1 plate with freshly grated parmesan mixed with breadcrumbs.
olive oil and a knob of butter
1 dash of lime juice.
rosemary and garlic slivers
salt and freshly ground pepper.
Step-by-step directions
1 Preheat the oven to 180°(th6).
2 In an oven-safe dish arrange your tomato halves, salt and pepper, then insert into each a sliver of garlic and a sprig of rosemary, drizzle with olive oil, cook in the middle of the oven for 15 minutes
3 On your cutting board arrange your escalopines, salt and pepper both sides then respectively pass them first through flour then through the egg and finally through the breadcrumb mixture then put in the freezer for 10 minutes.
4 After this time in a large pan pour a good dash of olive oil and a piece of butter. Then when the mixture is almost foaming install your tuna slices cooking 6 minutes on each side then turn off the heat and cover your pan for 5 minutes.
5 Then on well-heated plates arrange your tomatoes coated with their juice then your escalopines then heat the pan and pour in your lime juice and coat them with it.
