This cheerful appetizer will surprise your friends. They'll probably think of rocket salad or something similar, but radish leaves have a slightly peppery flavor and you can use them just as well to make a soup as mixed into whipped cream. Bayonne ham in strips brings saltiness and fat that stands up to the acidity of vinegar. Prepare it really at the last minute, otherwise the leaves soften and the salad cooks on itself. Two bunches of nice green leaves are enough for four plates.
