Horse sirloin is a lean meat with 2-5 % fat and 65 % unsaturated fatty acids. Rich in iron and vitamin B12, it's pan-seared for just 1 minute on each side. Here we serve it with a pepper and Cahors wine sauce, button mushrooms, and roasted new potatoes.
Ingredients for 4 servings
- 7 oz (200 g) button mushrooms, cleaned and quartered
- 12 to 16 small new potatoes, cooked in salted water or steamed
- 2 garlic cloves, degemmed and thinly sliced
- 1 shallot, finely chopped
- 1 fl oz (3 cl) wine vinegar
- 1.1 cups (25 cl) wine-based sauce (leftover braised meat gravy, stew, or beef burgundy)
- 12 peppercorns, crushed into mignonnette
- Salt and freshly ground pepper
- Butter and oil
