Recipe: Zucchini Flan with Parmesan and Curry
Step-by-step directions
1 Wash the zucchini thoroughly. Grate them with the large-hole grater without removing the zucchini skin.
2/ Then drain them in a colander, salt and leave for about ten minutes.
3/ Meanwhile, crack the eggs, beat them then add the flour, curry, cream and parmesan.
4/ Take your zucchini and press to remove the water, press well (so you don't end up with water at the bottom of your flan).
5/ Incorporate the grated zucchini into your egg and cream mixture.
6/ Distribute in small ramekins (butter and flour your ramekins) or silicone molds.
Bake for 30 minutes at thermostat 180° (6).
