Ingredients for 6 servings
- 300 g (10.5 oz) chestnut cream
- 50 g (1.75 oz) dark chocolate 60%
- 50 g (1.75 oz) caster sugar
- 100 g (3.5 oz) butter
- 50 g (1.75 oz) cornstarch (corn flour)
- 4 eggs
Whisk the 4 egg yolks with the sugar,
then incorporate the cornstarch,
just melt the butter and chocolate,
add the chestnut cream,
mix everything together.
whip the 4 egg whites until stiff peaks form
and gently fold them into the mixture,
pour into a buttered mold,
place in the oven at 180° for 20 to 25 minutes.
