Ingredients for 4 servings
servings
1 beautiful chicken or 4 chicken breasts
4 tablespoons of tandoori paste (I used 4 tablespoons of the spice powder)
1 plain yogurt
3 tablespoons of oil
1 large chopped onion
2 crushed garlic cloves
1 cinnamon stick
8 cardamom seeds from the spice island
4 teaspoons of fresh ginger
2 teaspoons of ground cumin
1 teaspoon of turmeric
2 teaspoons of garam masala
200 g (7 oz) of peeled tomatoes
20 cl (0.8 cup) of broth
the juice of 1/2 lemon
Step-by-step directions
Marinate the chicken with the tandoori paste and yogurt mixed well, I left it overnight, I took a freezer bag and let it soak in the refrigerator. In a saucepan, heat the oil, add the cinnamon, cardamom seeds and onion and simmer gently for 3 minutes. Then add the ginger, garlic, turmeric, cumin. Let cook for just one minute then add the chicken in its marinade. Sauté the chicken for 3 minutes then add the tomatoes cut into cubes, the broth, the garam masala and the lemon juice. Stir well and cook on low heat for 20 minutes if they are escalopes, 40 minutes if they are chicken pieces. At the end of cooking remove the cinnamon stick. Serve with rice. Bon appétit!!!!
Chef Patrick's Comment
Good recipe. Although normally in a Massala you first sauté your chicken pieces and add all the spices etc afterwards so they sweat and release their flavors and aromas well.
