Ingredients

  • Proportions for about a dozen massepains:
  • 4.5 oz (130 g) of dark chocolate over 50%
  • 1.75 oz (50 g) of caster sugar
  • 2.1 oz (60 g) of very high quality almond powder
  • 2 to 1 fl oz (3 cl) of strong coffee (arabica)
  • 0.7 fl oz (2 cl) of whole milk
  • 1 egg (1 yolk and 1 white)
  • 1.75 oz (50 g) of farmhouse butter
  • icing sugar
