An original recipe to present a baked egg in its nest of multicolored bell peppers.

Ingredients for 1 servings

for the nest:
1 potato
1 egg
1 tablespoon of parmesan
pepper
For the inside of the nest
1 piece of red bell pepper cut finely into strips
1 piece of yellow bell pepper cut finely into strips
1 piece of orange bell pepper cut finely into strips
1 piece of green bell pepper cut finely into strips
1 egg
1/2 onion
2 tablespoons of oil
salt, 5-peppercorn grind
Step-by-step directions
1 Peel and grate your potato into a bowl.
2 In a bowl beat the egg like an omelette, add your tablespoon of parmesan, pepper. Mix with the potatoes.
3 Take a small non-stick round mold (I used a small cocotte) generously butter your mold. Incorporate your potato mixture by pushing the potatoes up the sides to give it the shape of a nest.
4 Cook at 390°F (200°C) for 15 to 20 minutes.
5 Once cooked, remove from oven and let cool. Unmold onto an oven-safe dish.
6 While this is happening, sauté the onion with the bell pepper strips for 2 minutes then continue for 2 minutes over low heat covered so they cook completely.
7 Take the nest and arrange the bell pepper strips all around it leaving a hollow in the middle. Add your egg in the middle. Salt and add 5-peppercorn grind. Put in the oven for 12 to 15 minutes (depending on ovens) and let your egg poach. Ready for the table!!!

Nice recipe, it's good to have posted it online because it will give ideas to our visitors. We make similar recipes in the kitchen by putting at the bottom of these nests salt cod brandade and black olives or diced scallops just pan-fried in olive oil and diced mini zucchini etc and we often crack a quail egg inside.
