1 Take some small round toasts (white bread or baguette), line them up on a large oven-safe platter, then drizzle each one with one or two drops of olive oil.
2 Top each with a small piece of parmesan, then a small spoonful of ratatouille and finish with a few capers.
3 Set your oven to grill position, then call your guests to the table. When the oven is nice and hot (2 to 3 minutes), slide your platter in for 4 to 5 minutes, checking that it's nicely browned.
4 Serve in the center of the table with small picks stuck in them. This is just a suggestion, of course. After that, feel free to use your imagination and create other little roasts as you please.
Don't exceed 4 to 5 minutes under the grill, or the cheese burns and the toast hardens. Watch for the first signs of cheese browning, that's when you pull the dish out. One extra minute and it's ruined.
