Ingredients
Pan-fried Forgotten Vegetables:
- 1 large parsnip
- 1 large rutabaga
- 1 large turnip
- 3 Jerusalem artichokes
- 2-3 tbsp soy cream
- 1 block smoked tofu
- malt yeast
- olive oil
- salt, pepper, curry
Step-by-step recipe
Peel the vegetables and cut them into cubes. Heat the olive oil in a skillet and add the vegetables, sautéing them like potatoes.
After about 10 minutes of cooking, add the curry and smoked tofu cut into cubes and let them brown for 5-7 minutes.
Finally add the soy cream and let it cook for 1 minute, then serve immediately and sprinkle with malt yeast!!!

Good recipe. Personally, I blanch the small cubes of Jerusalem artichokes before serving them to avoid any digestive discomfort (smile).
