Recipe: Leeks in Cream
Step-by-step directions
1 Sweat the white parts of well-washed leeks, cut into rounds, in olive oil for 5 minutes covered.
2 Salt, pepper then add a grating of nutmeg, and moisten with cream to cover.
3 Let cook 7 to 8 minutes then remove (drain) the leeks and spread them on a plate.
4 In the still hot cream, add while stirring with a whisk an egg yolk beaten with a little Parmesan then pour over the leeks.
5 Then pass under the oven broiler for 2 minutes.
