Recipe: Chicken with Côtes-du-Jura
Step-by-step directions
1 soak the mushrooms. mince the shallot and sweat it with the mushrooms in a little butter. season.
2/ deglaze with 0.4 cup (10 cl) of wine. cook for 5 minutes. add the 0.8 cup (20 cl) of cream and let simmer for 10 to 15 minutes.
3/ meanwhile, cut the chicken into pieces. and brown them in the casserole with butter and olive oil for about 10 minutes.
4/ deglaze with 0.4 cup (10 cl) of wine. add the cream, mushrooms and 0.4 cup (10 cl) of water.
5/ let simmer for 45 minutes. taste and adjust the seasoning.
serve with spaghetti.
it is delicious with dried porcini mushrooms.
