Ingredients for 6 servings
- 1 farm chicken,
- 20 cl of côtes du jura
- 20 cl of heavy cream
- 20 gr of dried porcini mushrooms
- butter and olive oil
- 10 cl of water approximately
- 1 shallot, salt, ground pepper
1 soak the mushrooms. mince the shallot and sweat it with the mushrooms in a little butter. season.
2/ deglaze with 10 cl of wine. cook for 5 minutes. add the 20 cl of cream and let simmer for 10 to 15 minutes.
3/ meanwhile, cut the chicken into pieces. and brown them in the casserole with butter and olive oil for about 10 minutes.
4/ deglaze with 10 cl of wine. add the cream, mushrooms and 10 cl of water.
5/ let simmer for 45 minutes. taste and adjust the seasoning.
serve with spaghetti.
it is delicious with dried porcini mushrooms.
