Winemakers also employ noble rot, a method that involves leaving the grapes on the vine longer so that Botrytis cinerea infects them, concentrating both sugars and aromatic compounds.
Bonnezeaux presents a golden hue with aromas of preserved fruits, honey, and nuts. On the palate, it is soft and round, with well-balanced acidity that provides a pleasant freshness. It is typically served as an accompaniment to desserts, though it can also be enjoyed at the close of a meal alongside blue cheese or apple tart.
Bonnezeaux is an age-worthy wine that can be cellared for several years. It is best served at 8 to 10°C, allowing it to express its full aromatic range and complexity. It can also be stored in a cellar, where it will evolve and improve with time.
