Ingredients

  • 4 wheat crepes
  • 3 clarified eggs (whites and yolks separated)
  • 5 oz (140 g) caster sugar
  • 0.5 oz (15 g) flour
  • 0.5 cup (13 cl) orange juice (freshly squeezed preferably)
  • 0.7 fl oz (2 cl) orange liqueur (grand marnier)
  • 2 sheets gelatin
  • 2 generous tbsp (optional) candied citrus peel
icing sugarfor the orange butter:
  • 3 juicy oranges
  • 1 tsp acacia honey
  • 2 tbsp orange liqueur
  • 0.7 oz (20 g) butter
