  • 3 clarified eggs (whites and yolks separated)
  • 140 g (5 oz) caster sugar
  • 15 g (0.5 oz) flour
  • 13 cl (0.5 cup) orange juice (freshly squeezed preferably)
  • 2 cl (0.7 fl oz) orange liqueur (grand marnier)
  • 2 sheets gelatin
  • 2 generous tbsp (optional) candied citrus peel
icing sugarfor the orange butter:
  • 3 juicy oranges
  • 1 tsp acacia honey
  • 2 tbsp orange liqueur
  • 20 g (0.7 oz) butter
