  • 14 oz (400g) Puy lentils
  • 1.1 qt (1 litre) of chicken stock
  • 1 onion, peeled and pricked with 2 cloves
  • 1 carrot, peeled and very finely chopped
  • 3 tomatoes, peeled, seeded and finely chopped
the juice of 1/2 lemon
  • 5.25 oz (150g) of cooked duck foie gras
  • 1 black truffle (1.4 oz (40g)), well brushed
some olive oil and blsamic vinegarsalt and freshly ground pepper
