  • Sweetbreads with creamed asparagus and black truffle jus for 4 people :
  • 4 good size sweetbreads
  • 16 fresh white asparagus
  • 3dl double cream (at the beginning of the bechamel sauce)
  • 150g (5.25 oz) of fine butter
  • 150g (5.25 oz) fresh bread crumb
  • 2 cooked black truffle 30-40g (1.4 oz) a piece, trimmed and finely sliced (finely chop the trimmings)
  • 1 hint of lemon juice
  • 8 cl (0.3 cup) red port
salt and freshly ground pepper
