Ingredients

For 6 rice pudding servings:
  • 6.25 oz (180 g) of short grain rice (caroline)
  • 1/2 teaspoon of cinnamon (1/2 for cooking and 1/2 later)
  • 2 packets of vanilla sugar or 2 vanilla beans with seeds scraped
  • 3.4 cups (80 cl) of whole milk
  • 6 egg yolks*
  • 5.25 oz (150 g) of caster sugar
  • 0.4 cup (10 centilitres) of whipping cream
  • 1.1 oz (30 g) of semi-salted butter
  • and 6 grains of fleur de sel
