Ingredients

For 6 rice pudding servings:
  • 180 g (6.25 oz) of short grain rice (caroline)
  • 1/2 teaspoon of cinnamon (1/2 for cooking and 1/2 later)
  • 2 packets of vanilla sugar or 2 vanilla beans with seeds scraped
  • 80 cl (3.4 cups) of whole milk
  • 6 egg yolks*
  • 150 g (5.25 oz) of caster sugar
  • 10 centilitres (0.4 cup) of whipping cream
  • 30 g (1.1 oz) of semi-salted butter
  • and 6 grains of fleur de sel
