1 You can adjust the quantity of ingredients based on your taste. I often cook by eye, so it's not easy for me to give you precise quantities. When I cook for people, I first try to understand their tastes so I can adapt the dish accordingly.
2 Make an omelet with the eggs, season with salt and pepper. Cut the omelet into large pieces about one centimeter by two. Set aside.
3 Cook the peas. At the end of cooking, drain and dip the peas in ice-cold water to set the chlorophyll and keep the color bright green. I use frozen peas from Picard, it works very well. Set aside.
4 Cook the rice in a pressure cooker. If you don't have a pressure cooker, to achieve the same result, simply cook the rice in a large volume of water in a pot. Bring to a boil, reduce heat slightly and cook for 4 or 5 minutes. The rice should start to become tender. Drain roughly and over very low heat, cover and let finish cooking. The rice at the bottom of the pot will form a crust, overall you'll get the same result as a pressure cooker.
5 When the rice is cooked, open the pressure cooker or pot and "crumble" the rice, which is in the form of a large block. Let the rice air out.
6 Cook the Chinese sausages. Ideally, put the sausages in the pressure cooker at the same time as the rice, they will flavor it. Cut into small cubes. Set aside. If you don't have them, take ham shoulder and cut into small cubes. Sauté the small cubes in a pan or wok with a little oil for 3 or 4 minutes. Set aside.
7 Peel the shrimp and cut into 3 or 4 pieces. Finely mince the garlic. Finely mince the onion.
8 In the wok, add a drizzle of oil over medium-high heat. Add the garlic and let it sweat for a few minutes. Add the onion and let it sweat for a few minutes. Add the shrimp and stir-fry everything for a moment. The shrimp will start to turn pink.
9 Add the rice. Drizzle a good amount of soy sauce over the rice. Mix everything well.
10 Add the sausages and omelet pieces. Mix well. Let cook for a bit.
11 If you like cilantro, take the cilantro stems and chop very finely. Add the cilantro leaves and chives on top and mix well. The dish is ready.
