Supions are tiny squid, just 4 to 5 cm long. The trap: overcook them and they turn rubbery. Here, 3 minutes per side on the griddle, then rest. The Charente garden vegetables pick up the caramel flavour left by the flesh.

  6. 1 yellow onion (sliced)
  7. 3 garlic cloves degerminated and chopped
  8. branches of "lemon" thyme
  9. salt and Turmeric powder
  10. fine salt and freshly ground pepper
